1 Tbsp olive oil
3 slices bacon
1 large onion chopped
2 cloves garlic minced
1 tsp salt
1 tsp pepper
3 C chicken broth
Pinch of red pepper flakes
1 Pound fresh collard greens cut into 2 inch pieces
1 or 2 Tbsp of tomato paste

Directions:
Directions:
Cook the bacon until crisp in a large pan
Remove bacon from the pan and crumble
Add some olive oil to the pan if needed - in order to saute the vegetables

Add onion and cook until tender ~ 5 minutes
Add garlic and cook until fragrant - ~ 30 seconds
Add the crumbled bacon back into the pan
Add the collard greens and fry/cook until they wilt

Pour in chicken broth, tomato paste and season with salt, pepper and red pepper flakes
Reduce heat to low, cover and simmer for about 45 minutes or until greens are tender
