1 large onion diced
4 cloves garlic minced
1 whole green bell pepper diced
2 stalks celery diced
4 C pre-soaked black eyed peas - that are sold in vacuum packed packaging in the refrigerator section
4 Tbsp butter - or less - use your judgement
5 C low-sodium chicken broth

2 or 3 Adeles Andouille sausages. A whole ham hock also works but I quit that long ago
Salt and Pepper to taste
Cayenne pepper to taste
2 Tbsp white vinegar

White or brown rice for serving

Heat butter in large pot over medium-high heat. Add onion, garlic, green pepper and celery and stir. Cook for 3 or 4 minutes until onions are softened
Stir in soaked beans, then add chicken broth, Andouille, salt, pepper and cayenne

Bring to a boil then reduce heat to low and cover the pot for about 30 minutes
After 30 minutes check the liquid level. If it's too soupy then cook without the lid on for another 15 minutes or so. If it's too thick then splash in some more broth

When the black-eyed peas are ready - Stir in vinegar and check for seasonings. Add more spice if needed

Serve over rice and be sure to get plenty of the cooking liquid spooned over the top

There are lots of variations and changes you can make with this dish. You can add red bell pepper, canned diced tomatoes, diced jalapenos, diced ham or sliced bacon instead of ham hocks or sausage.

It is the Simes and LeBreton family tradition to serve black-eyed peas and also collard greens on New Year's Day to ensure health and wealth in the coming year!
