1 lb. Italian sausage
1 T. olive oil
1 small onion, copped
3 garlic cloves, minced
2 medium carrots, sliced
2 celery stalks, chopped
4 c. chicken broth
1 c. Ditalini pasta
1/2 tsp oregano
1/2 tsp basil
1/2 c. heavy cream ( can sub milk or cocounut milk)
1/2 c grated parmesan cheese
2 c. fresh spinach, chopped
salt and pepper to taste

In a large pot, heat the olive oil. Add the italian sausage and book, breaking into crumbles. Cook until browned. Remove the sausage from the pot and set aside. Add the Broth to the pot and bring to a boil. Add the Pasta and cook until tender, about 8 minutes. Lower the heat to medium. Add the herbs, sausage, heavy cream and parmesan. Simmer for about 5 minutes, allowing the soup to thicken a bit. Stir in the chopped spinach until it wilts. Season with salt and pepper to taste.
