Notes: Here are mom's notes about this recipe:
The first step to this recipe is very important to get right as I learned when I was about 9 or 10 years old. I was spending some time at Grandma's during summer vacation as I loved to do and I also loved to try to help Grandma and Aunt Lucy cook, shell peas, shuck corn and pick vegetables from the garden. Well, I really didn't love the corn shucking part actually but I did it anyway! But anyway, the cooking I did enjoy and learned a lot there, especially the day Aunt Lucy and I were making Wilted Salad. The way I remember it is she made the mistake of leaving the kitchen or paying attention to something else other than me when she told me to heat up the oil and vinegar and did not tell me what order to do so. So, I get a pan and proceed to heat that oil up really good and hot then I pour in the vinegar. Well that's when it shot a flame up to the ceiling practically and the noise sounded event worse. I don't remember much else except yelling "oh my Lord" and running over Lucy out the kitchen door! So I can't tell you what Aunt Lucy and Grandma did to fix my explosion, I just remember Grandma laughing and of course giving me a big hug to let me know it was ok. I doubt she would have been upset with me if I had blown the kitchen up because that's the kind of special Grandma she was and the kind I want to be. I'll probably never come close but I hop I can show my grand children even half the unconditional love, simple pleasures and good memories as she gave me. Not to leave out Aunt Lucy as she has given me this one and so many good memories as well. She was a very special Aunt. Although she has gotten a lot of mileage out of this salad story just ask her and she will just laugh and be glad to tell you about her not so smart niece! Ha Ha! I hope you enjoy this salad recipe as much as I enjoyed remembering the story behind it.
