1 pound (453 grams) beans, picked of any debris and rinsed
3 tablespoons (36 grams) Diamond Crystal kosher salt
1 ¾ teaspoon (10 grams) baking soda
8 ½ cups (2 liters) water

Directions:
To 1 pound of dried beans soak in a 7.9% salt and 2.2% baking soda brine made with 441.5% water.

Cover loosely and let soak at room temperature at least 8 and up to 12 hours. Drain the beans, then rinse well under running tap water before cooking.

Skip the soak on thin-skinned beans like black-eyed peas, black beans, and lentils. For other beans, it is best to soak unless you know for sure that you're dealing with high quality, freshly dried beans, in which case you can skip it.

As an alternative to bring, add between ⅛ and ¼ teaspoon baking soda per pound of dried beans to the cooking water.
