1/2 c extra virgin olive oil
Juice of one lemon (3 T)
4 garlic cloves, minced
2 t dried oregano
1 t dried thyme
1 T Dijon mustard
1 t kosher salt
1/2 t freshly ground black pepper

6 bone-in chicken thighs

1 med zucchini, halved lengthwise and thickly sliced
1 yellow bell pepper, seeded and cut into chunks
1/2 large red onion, thinly sliced into wedges

1/2 c kalamata olives, pitted
1/4 c feta cheese, crumbled

Directions:
Preheat oven to 425º. Whisk together oil, lemon juice, garlic, mustard and spices.

In a large bowl, use your hands to coat the thighs with 2/3 of the marinade. Marinate 10-15 minutes on the counter.

Spread the vegetables on a parchment covered, rimmed cookie sheet; and, drizzle the remaining marinade on top. Mix to coat the vegetables.

Add the thighs to the baking sheet, nestling the veggies around them. Bake 30 mins.

Remove sheet from the oven; add olives and feta. Return to the oven for another 10-15 minutes or until the veggies are softened and the chicken is cooked through. 175º internal temperature.
