2 Chicken Breasts, cubed in bite size pieces
6 Cups chicken Broth (6 cups water, 6 tsp oxo)
1 Bay Leaf
2 Carrots, diced
1 Onion, diced
2 Celery Stalks, diced
1 Tsp Garlic Powder
1 Tsp Thyme
1 Tbsp Parsley
1 Tbsp Lemon Zest
1/4 Cup Lemon Juice
1 Tsp Salt
1 Cup Orzo or Rice
Salt and Pepper to Taste
Parmesan Cheese, shredded (optional)

Turn yor instant pot to saute. Add in the chicken and broth. White the pot is heating, prepare vegetables. Add to pot along with the seasonings and juice. If using rice, add it now. (if using orzo wait till later). Turn pot off. Cover pot and secure lid. Set valve to sealing. Set high pressure 8 minutes. When done do a quick release. If it foams. revent and wait 3 minutes and try again. Remove lid when you can and discard bay leaf. If using orzo add it now. Turn pot to saute and cook for 5-6 mintues. Turn off and serve with parmesan cheese, if using.
