Ingredients:

1 C oats, (not instant)
1 tsp salt
1 tsp yeast
2-3 T honey
2 C warm water (100-115 degrees)

Directions:
Directions:
Mix flour, oats, salt and yeast together. Combine water and honey and pour into the bowl. Stir until incorporated.

Cover bowl with Saran wrap and let sit on counter for 12-24 hours.

Preheat oven to 450 degrees. Put a Dutch Oven in oven to heat up while oven is heating.

On a heavy floured surface, turn dough out. Flour your hands and with a bench scraper, turn dough over several times and form into a round ball. Place dough on parchment paper and score top of dough with scissors.

Remove pot from oven and place dough into the pot and cover. Sometimes I sprinkle a little oats on top.

BAKE 30 minutes and then remove lid and bake for another 10-15 minutes until it is as brown as you like.

Let cool completely before slicing.
