6 Small Baking Potatoes
2 Tbsp Butter, melted
1/2 Tsp Parsley
1/4 Tsp Seasoned Salt
1/4 Tsp Garlic Powder
3 Slices Bacon, cooked and crumbled
2 Tbsp Green onions, sliced
1 Cup Cheddar Cheese, shredded

Sour Cream for Serving, optional

Preheat the oven to 425º. Scub the potatoes and poke with a fork 5-6 times. Place them directly on the middle rack of the oven. Bake for 40-50 minutes or until tender. Remove from the oven and allow to cool.

When cool, cut the potatoes in half and sccop out the flesh leaving a 1/4" shell.
In a small bowl combine the butter and seasonings. Brush both sides of potatoes with butter mixture.

Place potatoes cut side down in a 9x13" baking dish. Bake for 15 minutes.
Flip potatoes over and bake for an additional 5 minutes or until slightly browned.

Fill each potato with cheese and bacon. Return to oven for an additional 5-7 minutes or until the cheese is melted and bubbly. Remove from oven and top with green onions and sour cream if using.

Note: Can be done in air fryer at 400º. Cook in microwave the same, then brush with butter. Cook 7-9 minutes, flipping in between or until crisp. Add bacon and cheese and cook 2 more minutes.
