1½lbs Boneless, Skinless, Chicken Thighs (approx. six thighs)

Rub
1½ tsp Smoked Paprika
1 tsp Dried Oregano
½ tsp Garlic Powder
½ tsp Salt
¼ tsp Onion Powder
¼ tsp Black Pepper
¼ tsp Cayenne Pepper
1 Tbs Olive Oil

Extra Olive Oil for frying

Sauce
1 Small Onion, Diced
2 Garlic Cloves, minced
6oz Cherry Tomatoes
4oz Chorizo Sausage (Mexican or Spanish)
¼ cup Dry White Wine
¾ cup Chicken Stock
¾ cup Heavy Cream
¼ cup Parmesan Cheese
½ Bunch of Fresh Basil Leaves, roughly shredded

Combine all the Rub ingredients and liberally coat the chicken thighs. Then, set aside for at least 15 minutes (preferably overnight in the fridge) to marinade.

Preheat a large skillet to medium-high heat, coat the pan with olive oil, and fry the thighs on both sides until golden brown and cooked all the way through.

Once the thighs are cooked, remove them from the skillet and set them aside on a plate.

Using the same skillet, lower the heat to medium, add olive oil as needed, and saute the diced onion & minced garlic until the onion is caramelized. Then add the tomatoes & chorizo and fry until the chorizo is thoroughly cooked.

Briefly turn the pan's heat up to medium-high, add the wine, and use a flat-nosed spoon or spatula to scrape the fond from the pan.
