Chicken Parm Recipe

4 skinless, boneless chicken breast halves
salt and pepper to taste
1 c Italian bread crumbs OR plain bread crumbs with 1 tsp Italian seasoning
2 eggs
1/2 c parmesan cheese
2 T flour (or more as needed)
1/2 c olive oil for frying
1/2 c spaghetti sauce or marinara
mozzarella slices, enough to cover chicken (shredded would work too)

Directions:
Directions:

1. Place chicken between plastic wrap or parchment paper and pound to 1/2" or 1/4" thick.

2. Mix bread crumbs and parmesan into shallow bowl or pie plate.

3. Beat eggs in shallow bowl or pie plate.

4. Dredge chicken in flour or sprinkle with flour to cover entirely.

5. Dip in egg.

6. Dip in bread crumb mixture.

7. Fry in olive oil until golden and completely cooked, about 5 minutes per side. The thinner the chicken, the quicker it will cook.

Finish two ways:

1. Drain excess oil and return chicken to pan. Add 2 T sauce to each piece and cover with cheese. Over and cook on low heat until cheese is melted.

2. Put chicken on baking pan and add sauce and cheese and put under broiler to melt the cheese. This way turns out crispier.
