4 cups (about 6-7 potatoes) peeled, cubed sweet potatoes
2 large eggs, beaten
1/2 cup granulated sugar
1/2 cup whipping cream
1/4 cup (4 tablespoons) butter, softened
1/2 teaspoon vanilla extract
1/2 teaspoon salt

BROWN SUGAR PECAN TOPPING

1/2 cup packed brown sugar
1/3 cup all-purpose flour
3 tablespoons butter, softened
1/2 cup chopped pecans

Directions:
Directions:
Preheat oven to 325º.

Place sweet potatoes in a saucepan and cover with water. Cook until tender. Let cool.

Place cooled sweet potatoes in a large bowl and mash with a fork.

Add eggs. Stir until well combined.

Add sugar, whipping cream, butter, vanilla, and salt. Mix until smooth.

Pour mixture into a 9" x 13" baking dish. Set aside.

In a medium bowl, combine brown sugar and flour. Cut the butter into the sugar mixture with a pastry cutter or knife until the mixture is coarse and looks like peas. Don't overmix. Stir in the pecans. Sprinkle on top of the sweet potato mixture.

Bake until the topping is lightly browned, about 30 minutes.
