5½ - 6 pounds 93% hamburger meat split into two pans
Add to each pan:
1 teaspoon salt
1 teaspoon pepper
½ teaspoon cayenne pepper
3 16-ounce jars of Ortega Taco Sauce (hot)
white or yellow corn tortillas, I use white
cooking oil
cast iron skillet

Directions:
Directions:
Divide hamburger into two pans and cook with salt, pepper and Cayenne pepper. While hamburger meat is cooking, mix together the two jars of sauce with more salt, pepper and cayenne pepper to taste. Drain grease from hamburger meat and join both
pans of hamburger meat together. If you are making one mild and one hot leave as is. Mix both Ortega sauce jars with hamburger meat. If "Hot" is to hot use mild sauce. Then add one more jar of sauce to hamburger mixture. If you continue to cook meat in divided pans, with one hot and one mild just divide sauce between the two pans.
In Iron skillet pour enough cooking oil to fry tortillas. Oil should be hot enough the tortilla sizzles when placed in skillet. Using two forks to form shell of taco, place tortilla in oil for a couple of seconds with 2 forks fold tortilla in half. Flip over and remove from skillet. Cooking tortilla should only take only a few seconds on each side.
