I lb ground beef
26 oz jar marinara sauce (I like Raos)
1 cup water
15 oz cottage cheese (or ricotta)
2½ cups shredded mozzarella
1/2 cup Parmesan
1 egg
12 lasagna noodles, uncooked (regular or no-boil)

Directions:
Directions:
Preheat oven to 350. Brown ground beef. Add marinara sauce. Rinse jar with water and add to sauce. Simmer for 5 minutes.

Mix together 1¼ cup mozzarella, ricotta, egg, and 1/4 cup Parmesan. Add a little salt.

Put one cup meat in 9X13 pan, Layer in the following order:

3 lasagna noodles
1/3 cheese mixture
1 cup meat

Repeat layers 2 more times. Top with 3 lasagna noodles, rest of sauce, rest of mozzarella and Parmesan. Cover with nonstick foil. Bake 45 minutes. Remove foil and bake additional `15 minutes.

If you use regular lasagna noodles, let the lasagna sit for a while before baking. The lasagna can be made the day before and refrigerated until ready to bake. If freezing, bake the lasagna, cool, then freeze. Thaw in refrigerator and reheat (covered) in 350 oven. I usually substitute Italian blend shredded cheese for the mozzarella.

To make a vegetable version. Omit the meat and make a mixture of vegetables chopped small: Onions, garlic, carrots, celery, bell pepper, mushrooms, squash, zucchini, etc. Cook in olive oil until tender. Add salt and pepper to taste before adding marinara and proceeding with the rest of the recipe.
