2 lbs dark chicken cutlets, cut into strips
2 cups shelled pistachios
1 cup panko crumbs

HONEY DILL DIPPING SAUCE

1/2 cup mustard
1/2 cup honey
2 tbsp mayonnaise
1/4 cup chopped fresh dill
2 tbsp lemon juice

Directions:

Preheat oven to 375º
Line baking sheet with parchment paper.

In a food processor, process pistachios until coarsely ground. Add panko crumbs to the food processor and pulse until combined. Transfer crumbs to shallow dish.

Mix together mustard, honey, mayonnaise, dill and lemon juice. Divide in half and reserve half the honey-dill mixture as a dipping sauce.

Add chicken strips to the remaining sauce and mix well to coat the chicken. Press each chicken strip into the crumb mixture to coat evenly. Lay on the prepared cookie sheet and bake for 30 minutes, turning halfway through.

Serve with dipping sauce.
