6 bone-in, skin-on chicken thighs
Salt and pepper to taste
1 tbsp olive oil
2” piece of ginger, grated
5 cloves garlic, grated
8 oz small shallots, peeled/halved
¾ cup sake or dry white wine
¾ cup soy sauce
¾ cup water
¼ cup granulated sugar
1 tbsp toasted sesame oil
Toasted sesame seeds for serving
Thinly sliced green onions for serving

Preheat oven to 425º. Heat olive oil in large, ovenproof skillet on high heat. Season chicken with salt and pepper to taste and add to skillet skin-side down. Cook until golden brown (about 6 minutes), and transfer to plate. Add ginger, garlic, and shallots to skillet and cook, stirring occasionally, for 1 minute. Add wine and cook until reduced by half (about 3 minutes). Add soy sauce, water, and sugar, and bring to a boil. Place chicken in skillet, skin-side up, and braise on middle rack of oven for 35 minutes until cooked through. Remove chicken from skillet and thicken sauce on high heat for about 3 minutes on stovetop. Pour sauce and sesame oil over chicken. Garnish with sesame seeds and green onion and serve with steamed rice.
