1 pkg pork tenderloins (2 pieces - 2 to 2½ lb total)

Brine:
1/4 cup kosher salt
4 cups warm water
2 TBL apple cider vinegar
2 TBL brown sugar
1 cup ice cubes

Spice Mix:
1 TBL chili powder
1 TBL garlic powder
1 tsp salt
1 tsp onion powder
1/2 tsp smoked paprika
1/4 tsp pepper

Herbs:
1/2 tsp dried parsley
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp dried thyme


2 TBL lemon juice
3 TBL butter sliced into 6 pats

Directions:
Directions:
1. Preheat oven to 400. Lay two long pieces of foil on a baking sheet - these will be used to wrap each tenderloin separately.
2,. In a gallon size freezer bag, mix salt with warm water until dissolved,. Whisk in vinegar, brown sugar, and ice. Place pork in bag and seal. Brine for 20 minutes. Remove pork, rinse, and pat dry.,
3. Whisk together spice mix. Evenly rub over pork
4. Heat 2 TBL oil in large skillet over medium heat. Sear each side of pork until golden, then transfer to foil.
5. Evenly sprinkle tops of pork tenderloins with remaining herbs and rub into meat. Evenly drizzle each pork tenderoil with lemon juice and top with butter. Bring up the sides of the foil to completely enclose each tenderloin.
6. Bake at 400 until pork registers 145-150 at the thickest part of the tenderloin, about 15 - 25 minutes. When done, loosen foil and let stand 5- 10 minutes before slicing.
