3 medium sweet potatoes
1/3 cup melted unsalted butter
1/2 cup chopped walnuts
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup maple syrup (+ 2 tablespoons)
1 teaspoon thyme
1/2 teaspoon cinnamon
3 oz goat cheese (crumbled)
(Feta works too)
1/3 cup dried cranberries (optional)

INSTRUCTIONS
-Preheat your oven to 400°F.
-Clean and slice the sweet potatoes into 1/2-inch rounds, keeping the skin on or peeling as preferred.
Toss the sweet potato slices in a bowl with melted butter, cinnamon, salt, and pepper, or mix in a ziplock bag by shaking it well.
-Arrange the slices on a baking tray in a single layer, leaving space for browning. -Bake for 25-30 minutes until fork-tender; baking time may vary with slice thickness.
-While baking, combine maple syrup, chopped walnuts, cinnamon, and thyme in a bowl.
After baking, remove the tray from the oven and top each sweet potato slice with about 1 teaspoon of the walnut-maple mixture.
-Return to the oven and bake for another 8-10 minutes.
-Once finished, sprinkle crumbled goat cheese over the warm roasted sweet potatoes.
Serve as is or with an extra drizzle of maple syrup on top if desired.
