1/2 onion chopped
3 medium carrots chopped
3 celery stalks chopped
4 cloves garlic minced
1 chicken or 3 boneless skinless chicken breasts
Salt and pepper
1T fresh thyme
3 sprigs rosemary
4 C chicken broth
2 T cornstarch
1 C heavy cream
1 package gnocchi
3 C baby spinach

Directions:
Directions:
Combine onion, carrots, and celery in slow cooker. Season chicken with salt and pepper and place on top of vegetables. Add thyme and rosemary, in herb bag. Pour in broth. Cook on high 4-5 hours or 7-8 on low.

Remove chicken and herb bag. Shred chicken and return to soup. Remove 1/4 C broth and whisk in cornstarch. Return to soup. Add cream and gnocchi. Cook on high for 45 minutes.

Stir in spinach until wilted. Serve with fresh ground pepper.
