10-12 Slices of Bacon
1 large shallot or 2 small, diced finely
2 T minced garlic
16 oz clam juice
1/2 cup flour
4 cups chicken stock
4-6 6.5 oz cans chopped clams (We like ours super clammy! So we use 6)
1 cup half & half
1 bay leaf
6 cups of potatoes (we prefer Yukon Gold)
1/2 T Old Bay Seasoning
1 t salt
1/2 t pepper
chopped parsley-optional for garnish

Directions:
Directions:
Chop bacon into bits and cook in a saucepan. Brown until the bacon is crispy. Once the bacon is crispy, remove it and set it aside. (Leave bacon fat in the pan.) Finely dice shallot and sauté for 5 minutes in the remaining bacon grease. After 3 minutes, add garlic and sauté for the remaining 2 minutes. Then add flour and cook another 1-2 minutes. Then add chicken stock and clam juice. Then add the juice only of the cans of chopped clams. (Do not add clams at this point!) Add half and half &half, bay leaf, potatoes, Old Bay seasoning, salt, and pepper. Cook the mixture until the potatoes are tender. (Approx 20-25 min.) Once the potatoes are done, remove the bay leaf and add the clams and bacon. Then cook for 3-5 minutes. Serve
