Ingredients: 1 Tbsp. butter 1 cup chopped smoked ham1 medium onion 2 (15 oz. ) cans of black-eyed peas drained 2 (15 oz. ) cans diced tomatoes with chilies 1 cup frozen corn kernels 1 tsp sugar ¼ cup chopped fresh cilantro for topping
Cheddar grits: 2 cups chicken broth 2 Tbsp. butter ½ cup grits 1 cup (4 oz) shredded white cheddar cheese.

Directions: |
Directions:Saute butter , ham bits, and onion. Add in remaining ingredients and heat throughly.
Grits: Bring broth to a boil with butter, then whisk in grits. Reduce and simmer until thick. Stir in cheddar cheese and stir until melted.
Serve with Hoppin John on top and add cilantro and extra cheese if desired. |
