7 lbs of Tomatoes
1 sm or 1/2 lrg Yellow Onion
10-12 Cloves Garlic
2 T Dried Basil
1 t Pepper
1.5 t Salt
2 cups Chicken or Vegetable Stock
2 Blocks of Borsin Cheese
Drizzle of Extra Virgin Olive Oil

Directions:
Directions:
In a roasting pan, add cored and halved tomatoes. Add onion, garlic, basil, salt, & pepper. Drizzle with olive oil and bake at 400º for 30-40 minutes or until tomatoes are soft. Add to the blender or immersion-blend until smooth. Add to the pot and add chicken stock and Boursin cheese. Simmer for approx 10 min then serve.
