4-6 Chicken Breasts or Thighs
4-5 cups Baby Spinach
1 Jar Sun-Dried Tomatoes
1 small shallot
1 cup Grated Parmesan Cheese
1 1/2 cups Chicken Stock
1/2 cup Heavy Cream
1/8 cup Flour
2 T Minced Garlic
1 block of Boursin of choice.

Directions:
Directions:
Season Chicken with SPG or favorite seasoning. On med heat, Chicken in 3 T of oil from the sundried tomatoes(not adding tomatoes). Cook Chicken for about 2-3 minutes per side, just enough to get a char then set aside.
Add two additional tablespoons of oil from Sun Dried Tomatoes to a pan. Add flour to make a roux. Once the roux is made, whisk in Chicken Stock. Add heavy cream, Boursin, and sun-dried tomatoes. (Remove sun-dried tomatoes from the bottle and chop them.) SPG to taste.
Once it thickens, add parmesan cheese and spinach. When the spinach cooks down, add chicken to the mixture to finish cooking.

Serve alone or over pasta or potatoes.
