Directions:
Directions:
Place 2-3 tablespoons of butter in a skillet and turn the heat on. Add the desired number of eggs - usually 6 eggs for this amount of butter. Stir with a spatula to mix.

Keep the temperature low and keep stirring with a spatula - low and slow is how you get the lightest, fluffiest scrambled eggs.

If the eggs begin to cook too quickly, pull off the burner and eggs will continue to cook with the pan's residual heat.

When the eggs reach a soft scramble, pull off the heat, season to taste and serve immediately.
