1½ c Oil
2 c Sugar
2 Eggs
1 t Salt
1 t Baking Soda
2 ½ c Flour
1 c Pecans
3 c Pears, chopped
1 c Coconut
2 t Cinnamon

Directions:
Directions:
Preheat oven to 350 º. Spray a tube or bundt pan. I make this in muffin size or in small multi hole other shape pans.
Mix oil, sugar and eggs, beat. Sift flour and dry ingredients together and add to sugar mixture. Mix. Fold in pears and nuts. Bake at 350º for 1 hour. Apples may be used, but it will take a little less time to cook.
This is the recipe I use for "PEAR BREAD". I make smaller sizes in various shapes like large cupcake size, rectangular muffin pans, square muffin pans etc.

I have to admit that I don't follow this recipe exactly. I use more pecans, pears, coconut and cinnamon. Everyone who has eaten this, loves it (at least as far as I know)!
