1 cup self rising flour
1/4 cup sugar
1 egg, beaten
1/2 cup milk
1/4 cup oil
1/2 tsp vanilla
Directions:
Directions:
Mix dry ingredients. Add eggs, oil, milk, and vanilla. Stir just until moistened. Spoon into greased and floured mini muffin tin. Bake 400 for 12 - 14 minutes.

OPTIONAL ADD-INS

Cherry Nut - 1/4 cup chopped cherries
1/4 cup chopped pecans

Chocolate Chip - 1/4 cup mini chocolate chops
1/4 cup chopped walnuts

Pineapple: Small can crushed pineapple, drained
