2 lb sausage, browned and drained
1 pkg Potatoes O’Brien or plain frozen diced hash browns (add onions if using plain)
1 lb shredded cheddar cheese
1 cup Bisquick
2 cups milk
¼ tsp pepper
4-6 large eggs
1 can chopped green chilies (optional)

Directions:
Directions:
Preheat oven to 400. Grease 9X13 baking dish. Mix sausage, potatoes, chilies, and half of the cheese. Toss with Bisquick and put into prepared dish. Slightly beat eggs. Whisk in milk and pepper. Pour over dry ingredients. Top with rest of cheese. Bake 40-45 minutes until knife comes clean. Cool 5 minutes before serving.
