Dry Ingredients:
2¼ cup flour
1 ¼ c sugar
3 tsp cinnamon 2
2 tsp soda
½ tsp salt

Wet Ingredients:
3 eggs
¾ cup applesauce
½ cup oil
1 tsp vanilla

Fruit/Nuts:
2 cups grated carrot
1 med apple, peeled and grated
8 oz can crushed pineapple, drained
½ cup coconut
½ cup raisins
½ cup chopped walnuts or pecans

Directions:
Directions:
Combine dry ingredients. In separate bowl, combine wet ingredients. Add wet to dry and stir until moistened. Mixture will be thick. Stir in fruit/nuts. Fill muffin cups 2/3 full. Bake 350 for 20-24 minutes.
