Cook red beets in pressure cooker for 15 minutes at 10 lbs. of pressure.

JUICE:
1 c. sugar
1 c. vinegar
2 c. water (use water from cooked beets)

Directions:
Directions:
Cook red beets. Once cool enough, peel the beets.

Reserve juice from the pressure cooker for use in the juice.

Mix ingredients for pickling juice and stir bring to a boil until sugar is dissolved.

Fill jars with sliced beets and pour the pickling juice in the jars.

Place in canner and boil for 10 minutes.
