2 c water
20 oz frozen black-eyed peas
2 tbsp oil
1 ½ c onion, chopped
1 clove garlic, minced
8 oz tomato sauce
1 tsp oregano
1 tsp basil
salt and pepper to taste
1 tbsp lemon juice

Directions:
Directions:
In large saucepan, bring water to a boil. Add frozen peas. Bring to a boil. Reduce heat, cover and simmer gently for 15 minutes. Drain, reserving ¾ c cooking liquid. Set aside. In a heavy skillet, heat oil. Sauté onion and garlic until onion is golden. Stir in tomato sauce, oregano, basil, salt and pepper. Simmer 5 minutes. Stir in peas, cooking liquid and lemon juice. Cover, Simmer, stirring often, about 30 minute or until sauce is thick.
