4 cups chicken breast, cooked and chopped OR meat from 1 rotisserie chicken, chopped
3/4 cup dried cranberries
3/4 cup chopped pecans
1 cup mayonnaise
2 tbsp apple cider vinegar
1 tbsp honey
4 tsp sugar or substitute equivalent sugar substitute
sea salt and black pepper to taste
1/2 tsp poppy seeds

Directions:
Directions:
In large bowl combine chicken, cranberries, and pecans, mix well.

In a small bowl, combine mayonnaise, vinegar, honey, sugar or sugar substitute, sea salt and pepper. Whisk until blended and smooth. Stir in poppy seeds.

Pour over chicken mixture, tossing well.

Refrigerate 2-3 hours. Serve chilled on lettuce or crackers or use to make a sandwich.
