1 c shortening
3/4 c sugar
2 eggs
1 c shredded carrots
2 c flour
2 tsp baking powder
1/2 tsp salt
Directions:
Directions:
In mixing bowl, cream shortening and sugar. Add eggs, mix well. Stir in carrots. Combine flour, baking powder and salt and gradually add to carrot mixture. Drop by rounded tsp 2 inches apart onto ungreased baking sheets. Bake at 400 for 8-10 minutes. Remove to wire racks to cool.
