6 medium firm, ripe tomatoes (2 lb), cut into thick wedges
1 large sweet pepper, cut into ½" wide strips
1 medium red onion, thinly sliced and separated into rings
1 medium cucumber, peeled and sliced
¾ c vinegar
¼ c water
2 tbsp sugar
1½ tsp mustard seeds
1 tsp celery salt
⅛ tsp ground red pepper
⅛ tsp ground black pepper

In a very large bowl, layer tomato wedges, sweet pepper strips, onion rings and cucumber slices.
In small saucepan, combine vinegar, water, sugar, mustard seeds, celery salt, red pepper & black pepper. Bring to boiling; reduce heat slightly. Boil, uncovered for 1 minute. Pour the mixture over veggies. Stir gently.
Cover; let stand at room temperature for 30 minutes. Chill in frig for at least 4 hours or up to 24 hours, stirring gently, avoiding breaking up tomatoes.

Serve with slotted spoon.
