48 littleneck or cherry stone clams
1/4 cup olive oil
4 cloves garlic, peeled and mashed
1 x 35 oz San Marzano plum tomatoes crushed
4 bottles clam juice
1/2 cup dry white wine
1/2 tsp dried oregano
1 Tbsp Italian parsley
1 Tbsp basil
red pepper flakes to taste
salt and pepper to taste

1. Rinse clams in cold water. Put into colander to drain
2. Heat oil in large heavy saucepan over medium heat. Add garlic, sautee 1 minute until golden. Don't burn.
3. Add clams then tomatoes, claim juice, wine, oregano, and red pepper. Raise heat and bring to a boil then lower to steady simmer and cook 7 minutes until liquid begins to reduce
4. Cover and continue to cook 5 minutes or until all clams have opened. Discard any that did not open. Stir in basil, salt, and pepper
5. Toss in chopped parsley, serve hot with warm crusty bread
6. 6-8 clams per dish
