1 lg Vidalia onion finely chopped (about 3 cups)
4 oz pepper jack cheese, shredded
8 oz reduced fat cheddar cheese, shredded
4 oz light cream cheese
1/2 c light mayo
1/4 tsp dried thyme

Directions:
Directions:
Heat oven to 375. Place 2 cups onion in bowl. Place cheeses, cream cheese, mayo, thyme and remaining cup of onion in food processor. Process until fairly smooth. Mix with onion in the bowl. Spoon into shallow 6 cup baking dish. Bake for 20 minutes. Stir. Bake 10 more minutes. Cool slightly and serve with crackers
