Ingredients:  
1 pound boneless chicken breasts, cut into bite size pieces
1 onion, diced
3 cloves minced garlic
1 red pepper diced
1 can (14.5 oz.) diced tomatoes
1 can black beans, drained and rinsed
1 can corn, drained
2 cups chicken broth
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon paprika
Salt and pepper to taste
Fresh cilantro chopped, (opt.)

Directions:
Directions:
1) In a large pot heat 1 tablespoon olive oil over medium heat.
2) Add onion, garlic, and red pepper. Cook until tender, about 5-7 minutes.
3) Add chicken and cook until browned about 5-6 minutes.
4) Add diced tomatoes, black beans, corn, chicken broth, cumin, chili powder and paprika, stir well.
5) Bring mixture to a boil, then reduce heat to low simmer for 20-25 minutes or until the chicken is cooked through.
6) Season with salt and pepper to taste.
7) Serve hot, garnished with fresh cilranto.
