2 1/2lbs. - boneless beef chuck, cut into 2-inch cubes, or stew meat
2 - yellow onions, chopped
3 - garlic cloves, minced
2 tbsp. - paprika
1/4 tsp. - cayenne
1 tsp. - dried marjoram leaves
1/2 tsp. - dried thyme leaves
1 - bay leaf
1 tsp. - sugar
1/4 cup - tomato paste
4 cups - chicken broth
2 tbsp. - balsamic vinegar
salt & pepper

In a large pan, heat a drizzle of olive oil. Season the meat with salt and pepper and sear on all sides. Once browned, place the meat in a Dutch oven. Add onions to the pan and cook until browned, stir in garlic and cook until fragrant; place on top of meat. Add the remaining ingredients to the Dutch oven, stir to combine, bring to a simmer and reduce the heat. Cook for 2 - 2 1/2 hours, occasionally checking to see if more liquid is needed. Skim fat off of the top. Remove lid and reduce to desired thickness.

Serve as a stew or over elbow macaroni if desired. Garnish with sour cream.
