½ c Oil
1¼ c Sugar
2 Eggs
1 c Bananas, RIPE and mashed (**see note in instructions)
½-1 t Vanilla
1½ c Flour
1 t Baking Soda
½ t Salt
1 t Cinnamon (I add a LOT more)
1 c Pecans, chopped (MORE!)

Preheat oven to 350º.

Using an electric mixer, in a large bowl, combine oil and sugar; mix until creamy. Add bananas, vanilla and eggs, mix well. In another bowl, combine flour, baking soda, salt and cinnamon; add to the oil and sugar mixture. Mix for 2 minutes. Fold in Pecans. Pour into a 9 x 5-inch loaf pan. Bake at 350º for 1 hour.

**I use more bananas, 5 medium-large or 6 small bananas. AND don't use green bananas, they should have some brown. I have used some pretty brown, mushy ones. Using the additional browning bananas makes for a very sweet and moist bread.

I bake these in smaller pans. I use 3 x 2-inch muffin size multi muffin pan, a square shaped multi muffin pan, regular or jumbo size muffin tins or various other sizes. Adjust the cooking time according to the size muffin size you are making. Check the muffins starting a at about 15 minutes and adjust accordingly. They are done when you insert a toothpick, and it comes out clean

I got this recipe from the "Generations Pope Family Cookbook (1997). It was a collection of recipes on my mother's side of my family. My Mom, sister, brother, sister-in-law, aunts, uncles and cousins contributed to that cookbook. This is my Aunt Daphne's recipe that she shared with us, and I want to pass it on to you.

My Aunt Daphne worked at a machine shop owned by her daughter and her son-in-law. Aunt Daphne, for as long as she was able, prepared lunch and this Banana Nut Bread. She made other desserts as well, but the workers and customers lined up at the kitchen door when she prepared this wonderful bread.

I changed it up a bit when I make my version of this Banana Nut Bread (using more bananas and pecans. But her way was loved by so many!)
