3 c All Purpose Flour
2 c Sugar
1 t Soda
1 t Salt
1 t Ground Cinnamon
1 c Nuts, chopped
3 eggs, beaten
1½ c Oil
2 c Ripe Bananas, Mashed
1 8 oz. can crushed pineapple, drained
2 t vanilla extract

Directions:
Directions:
Preheat oven to 350º.
Combine all dry ingredients; mix with a fork, set aside.
In a separate bowl, combine wet ingredients. Add, the dry ingredients to the wet ingredients, add nuts and stir just until the batter is moistened. Stirring too much causes tough, denser bread.
Spoon batter into 2 greased and floured (or use cooking spray) 9 x 5 x 3-inch loaf pans. Bake at 350º for 1 hour and 5 minutes or until done. Remove from oven and set aside to cool 10 minutes before removing from pans. Place slightly cooled bread on wire cooling racks; completely cool.
