4 cups fresh vegetables*
¼ cup lemon juice
¼ cup oil of choice (vegetable, olive, etc)
1 Tablespoon sugar
½ teaspoon salt
½ teaspoon oregano or thyme, dried
⅛ teaspoon pepper

1. Place vegetables in a 1 ½ quart shallow container.
2. Mix all other ingredients together and pour over the vegetables
3. Cover and refrigerate 6 hours or overnight, stirring occasionally.
