3 lb beef chuck roast
Salt and pepper to taste
2 Tbsp olive oil
4 cloves garlic, minced
1 large onion, sliced
4 large carrots, peeled and cut into chunks
4 large potatoes, peeled and cut into chunks
1 cup beef broth
˝ cup red wine (optional)
2 Tbsp tomato paste
1 Tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
2 bay leaves
Fresh parsley, chopped (for garnish)

1. Season the beef chuck roast generously with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side. Transfer the roast to the crockpot.
3. In the same skillet, add minced garlic and sliced onion. Sauté until the onion is translucent and fragrant, about 3-4 minutes. Transfer to the crockpot.
4. Add carrots and potatoes around the roast in the crockpot.
5. In a small bowl, mix together beef broth, red wine (if using), tomato paste, Worcestershire sauce, dried thyme, dried rosemary, and bay leaves. Pour the mixture over the roast and vegetables in the crockpot.
6. Cover and cook on low for 8 hours or on high for 4-5 hours, until the roast is tender and easily shredded with a fork.
7. Remove the roast and vegetables from the crockpot and place on a serving platter. Discard the bay leaves.
8. Garnish with freshly chopped parsley before serving.
