2 lbs cod fillets
½ tsp kosher salt
¼ tsp white pepper
2 Tbsp extra virgin olive oil, plus more for drizzling
1 cup sliced shallots
1 medium garlic clove, minced
8 ozs cherry tomatoes, halved
2 tsp fresh thyme (or 1 teaspoon dried)
1 tsp dried oregano
A pinch of freshly grated nutmeg
8 ozs baby spinach
8 ozs feta cheese, crumbled
1 lemon, cut into wedges for serving

Preheat Oven: Heat your oven to 350°. Line a baking sheet with foil and lightly grease with olive oil or cooking spray.
Prepare the Cod: Check cod fillets for pin bones and remove if needed. Place fillets on the prepared baking sheet, seasoning both sides with salt and white pepper.
Sauté Veggies: Heat olive oil in a sauté pan over medium heat. Add shallots and cook until softened, about 3 min. Then, add garlic, cherry tomatoes, thyme, oregano, and nutmeg, cooking for an additional 3 min.
Wilt Spinach: Add spinach to the pan and cook until wilted, about 2 min. Spread the veggie mixture over the cod fillets and top with crumbled feta.
Bake: Bake uncovered for 20 min or until the fish begins to flake. Broil for 2 min to brown the feta.
Serve: Drizzle with olive oil and serve with a lemon wedge.
