2.5 - 3 lbs. of boneless, skinless chicken thighs
6 large smoked sausages (we use Kielbasa brand)
3 - 4 T. Creole Seasoning (more if needed)
1/2 block of Cream Cheese
1 C. Heavy Cream
3 large Bell Peppers of your choice, we prefer Red or Yellow
1 small Shallot - minced
2 tsp. minced garlic
3 C. Chicken Stock
Parmesan Cheese

Directions:
Directions:
Cut chicken and Sausage into bite-sized pieces. Sauté in a pan with the Creole seasoning, cook until the chicken is just underdone. Remove from the pan and drain the grease, leaving enough remaining to saute the shallot and garlic.
Sauté shallot until translucent, add Garlic and cook 1-2 minutes.
Deglaze the pan with chicken stock and bring to a boil.
Add cream cheese and whisk until blended.
Add Heavy Cream and additional T. of Creole seasoning. Bring to a boil.
Add chicken and sausage back to the pan and add the peppers as well. Continue to cook on medium until the chicken is done and the peppers have the tenderness you want. Approx 10 minutes.

Serve alone or over pasta, mashed potatoes, or mashed cauliflower
