1 ¼ cup sugar
1 egg
1 ½ tsp almond extract
2/3 cup milk
1 ¼ cup flour
½ tsp baking powder
1 stick melted butter
1 cup sliced almonds

Directions:
Preheat the oven to 350º.
Beat the sugar, eggs, almond extract, and milk.
In another bowl, mix the flour and baking powder.
Add the dry ingredients to the wet, then add the melted butter and mix thoroughly.
Add the sliced almonds and mix.
Spray pan generously with Pam with flour.
Bake for 45-50 minutes until the edges are golden brown or until a toothpick inserted in the center comes out clean.
Tip: If you are having trouble removing the cake, loosen the cake by inserting a knife along the edges of the pan.

This recipe is from my good friend, Cathy Nikolas Koch. She made it to greet a number of us who came for a visit to her new home in Lake Geneva, WI in 2019. What a nice greeting! It's not overly sweet, but a nice treat.
