1 recipe for a 1 crust pie

4 tablespoons melted butter
2 tablespoons flour
4 eggs, lightly beaten
1 teaspoon vanilla
3/4 cup pure maple syrup (I use Simple Truth Organic Grade A Robust Maple Syrup)
1/3 cup sugar
2/3 cup brown sugar
1/2 teaspoon salt
10 ounces of pecan halves (or pecan pieces)

Directions:
Directions:
Preheat oven to 350 degrees. Prepare pie crust and set aside.

Mix together the melted butter and the flour. Set aside.

Combine the remaining ingredients and mix well. Add in the melted butter / flour mixture and mix well. Pour into pie shell and bake for 40 to 45 minutes or until the pie no longer jiggles in the center.

Pecan Pie was not something my family ate a lot and not something we made. The first time I had pecan pie was at the luncheon held after my Grandpa Clark’s funeral. I found I liked it but it was extremely sweet so I could only eat a little at a time. Since then, I’ve made pecan pie mainly at someone’s request for a potluck. I’m including this in the cookbook because I mentioned this pie in the section “Ingredients – Sugar, Syrups, Honey and Molasses” where I talked about substitutes for corn syrup so I felt it should be included in the book. It’s actually a delicious dessert and usually there is someone we all know that loves a good pecan pie (I know I do).
