6 - thick sliced Bacon Strips, chopped
1 - Package Jimmy Dean Sausage Crumbles
3 - Cups Chicken Stock
3 - Cups Water
1 - Tsp Garlic Powder
1/2- Tsp Black Pepper
2 - Cups Quick - Cooking Grits
2 & 1/3rd Cups Velveeta Cheese, Cubed
1/2 - Cup Butter, Cubed
1/2 - Cup Milk
4 - Large Eggs, Lightly Beaten, Room Temperature
2 - Cups White Cheddar Cheese or Monterey Jack, Shredded

1) Preheat the oven to 350º F
2) Grease a 9 X 13 inch Baking Dish
3) In a large saucepan over medium heat, add the bacon and cook until crisp.
4) Transfer the Bacon to Paper-Towel-Lined plate - do not clean saucepan
5) Chop the Bacon into Small Pieces
6) In the same large saucepan with the bacon drippings, add the Chicken Stock, the Water, the Garlic Powder and the Black Pepper, and bring to a boil.
7) Slowly add the Grits to the chicken stock mixture and stir to combine.
8) Reduce the heat to medium-low and cook the grits mixture, covered and stirring occasionally,m until it thickens, about 5-7 minutes.
9) Transfer the grits mixture from heat.
10) Add the Velveeta cheese cubes and the Butter to the grits mixture and stir until the cheese and the butter have melted.
11) Add the Milk
12) Slowly add the eggs to the grits mixture and stir until blended
13) Add the packaged Sausage crumbles
14) Transfer the grits mixture to the prepare baking dish and sprinkle with the White Cheddar Cheese.
15) Bake the Grits Mixture until the edges are Golden-Brown and the Cheese has Melted, About 40-45 Minutes.
16) Let the Grits Bake Stand, About 10 Minutes.
