1 - Pkg Jimmy Dean Sausage Crumbles
1 - Pkg Hormel Diced Ham
4 - Strips of Bacon
1 - Small onion, diced small
2 - Celery stalks, diced small
1/2 - Red pepper, diced small

3 - Tbsp Butter
3 - Tbsp Flour
2 - Cups Chicken Broth
1 - Cup Milk (or Heavy Cream) [save 4 Tbsp for Eggs]

1 - Dozen Eggs
1 - Tbsp Tony's No Salt Seasoning
1 - Pkg of seasoned Shredded Hash Browns (in refrigerated section of grocery store)
2 - Cups of Shredded Sharp Cheddar Cheese
2 - Cups Shredded Monterey Jack Cheese
10 - Oven-Ready Lasagna Noodles
Salt & Pepper

Directions:
1) In a large skillet saute onion, celery & red pepper in 1 Tbs Butter until soft and translucent.
2) Add 2 Tbs Butter to skillet to melt. Stir in flour until completely combined. Stir in Chicken Stock and Milk. Add about 1/4th of the Sausage Crumbles & 1/2 Teaspoon of Tony's No Salt Seasoning. Increase heat to bring to boil, and cook until thickened, about 5 minutes. Additional season to taste with Salt & Pepper. Remove from heat and set aside to cool.
3) Cook the 4 Strips of Bacon to crisp. Break up into small pieces. Set aside.
4) To assemble Lasagna: (Coat 9 X 13 baking dish with PAM or Olive Oil)
Spoon 1/2 cup gravy into the bottom of the baking dish and spread to coat.
Place 4 Lasagna noodles over the bottom of the Pan, then top with a layer of 1/2 of the Hash Browns, 1/3rd Sausage, 1/3rd of Gravy, 1/2 Cup of each Cheese
Repeat with another layer of noodles, then top with a layer of 1/3rd Ham, 1/3rd Gravy, 1/2 Cup of each Cheese, Sauteed Vegetables.
Repeat with another layer of noodles , then top with a layer of last of Hash Browns, Sausage, Ham, Gravy, Cheeses, and Bacon.
5) Whisk together Eggs, 4Tbs Milk, 3/4 Teaspoon of Tony's Seasoning.
Pour over the entire stacked Lasagna.
6) Cover tightly with foil and refrigerate overnight (or at least 8 hours)
7) Preheat Oven 375º degrees
Bake Covered for 40 Minutes
Uncover and Bake Additional 15 minutes
Let Rest at Least 10 minutes before Slicing.

I created this Breakfast Lasagna for my Church Sunday School class by combining three different recipes and adding personal favorite brands. It's a bit labor intensive to put together but you can make it the night before (which is preferred) which then in the morning you just pop it in the oven for basically an hour - easy peesy.
I have always received great raves and requests to prepare this dish again and again.
