Dough

2 cups sifted flour
1 teaspoon salt
2 teaspoons baking flour
2/3 cup shortening
1 teaspoon lemon juice
1/2 cup hot water
1 egg yolk, beaten

  1. Mix together flour, salt, and baking flour.

  2. Add shortening, lemon juice, hot water, and egg yolk.

  3. Chill about one hour.

  4. Pat pastry out using most for lining pans, and saving the rest to top the pies.

 

Filling

3 pounds lean meat
salt and pepper
1 large onion
1 clove garlic

  1. Cut meat into small cubes, removing most of the fat. Braise meat, then add hot water to cover, salt, pepper, onion, and one clove garlic.

  2. Cover and cook until tender.


 

Sauce

1 stick (1/2 cup) butter
3/4 cup flour
11 large can solid pack tomatoes
1 can mushroom sauce
1 10-ounce can Las Palmas red chile sauce
1 clove garlic
1 tablsepoon (hot) grandma pepper

  1. Melt butter in a skillet, add flour. Mix.

  2. Add tomatoes slowly (after putting them through a sieve) and mushroom sauce (diluted with 2 parts water).

  3. While adding hot sauce, taste occasionally to get the desired heat. If less hot sauce is desired, add more water.

  4. Add one garlic clove and 1 tablespoon grandma's pepper. Drain liquid from meat and add to the sauce.

  1. Use small pans, about 4 1/2 inches across the top. Take half of the sauce and add to the meat; fill the small lined pans and cover with the remaining pastry as crust.

  2. Bake at 425ºF for 25 minutes.
