CHOCOLATE SPICY CHIPOTLE BOURBON ICED COOKIES Recipe

Ingredients: 2 c. butter 2 ½ c. sugar 2 eggs 2 tsp. vanilla 4 c. flour ½ c. cocoa powder 1 heaping TBS of hot chipotle seasoning (I use Dan-o’s) 1 tsp. kosher salt
Bourbon Royal Icing 2 c. bourbon ¼ c. water ½ c. brown sugar 4 TBS Meringue powder 6 c. powdered sugar 1 tsp. vanilla

Directions:Mix together butter and sugar for 2 minutes. Add eggs and vanilla, mix until combined. Combine dry ingredients fully in a separate bowl. Add to wet ingredients and mix until just combined. DO NOT OVER MIX
Roll out between 2 sheets of parchment (do not add more flour for rolling out dough as it will make the cookies tough) and cut with desired shapes Bake at 325º for 11 minutes. Decorate with Bourbon Royal Icing.
To Make Icing: In a medium sauce pan, heat bourbon on medium high heat. Light bourbon on fire to burn off alcohol. Divide and set aside.
In a small sauce pan, add ¼ c water and ¼ c of reduced bourbon to pan on medium low heat. Add ½ c brown sugar and stir until sugar is dissolved to create a simple sugar syrup. DO NOT COOK THE SUGAR, just heat until it is melted and remove from heat.
Add bourbon simple syrup to mixer with meringue powder. Whisk until frothy. Add 3 c of powdered sugar and mix until combined. Add vanilla and rest of powdered sugar.
Divide for piping colors or brown, green and white. Use remaining reduced bourbon to thin royal icing to flood consistency and ice cookies. Decorate with piping colors. |
