Ingredients: 1 c. butter 1 c. light brown sugar ½ c white sugar 2 eggs 2 tsp. vanilla ¼ tsp. baking powder 3 ½ c. flour
Brown Sugar Buttermilk Syrup ½ c. butter ¾ c. brown sugar ½ c. buttermilk 1 tsp. baking soda 1 tsp. vanilla
Croissant cubes 1 c. whole milk 1 c. heavy cream ½ c. brown sugar ½ c. white sugar 1 egg 1 tsp. vanilla ½ t cinnamon 4 bakery croissants – cubed into small pieces

Directions:Preheat oven to 325º. Line baking sheet with silicone baking mat. Make Brown Sugar Buttermilk Syrup and set aside Make Croissant cubes and set aside.
Cream together butter and sugars until mixed, about 2 minutes Add eggs and vanilla Mix together all dry ingredients and add in batches to wet ingredients until combined. DO NOT OVER MIX
Fold Croissant cubes into cookie mixture. Scoop onto baking sheet and bake for 10 minutes Baste with Brown Sugar Buttermilk syrup and bake for 3 more minutes.
To Make Croissant Cubes: Mix first 7 ingredients together in bowl. Add croissant cubes and saturate all cubes. Let set for 30 minutes Separate cubes on baking sheet and bake for 30 minutes, stir every 10 minutes for an even bake
Pour 1 c Brown Sugar Buttermilk syrup over cubes and coat evenly. Bake for 3-5 more minutes or until syrup caramelizes. DO NOT LET TURN DARK BROWN to avoid a bitter burnt sugar taste.
To Make Brown Sugar Buttermilk Syrup: In medium sauce pan over medium heat, combine butter, brown sugar and buttermilk. Bring to a boil and cook for 2 minutes, stirring constantly or until the sugar is completely dissolved.
Remove from heat, add baking soda and vanilla and stir. |

Notes: For 5 years I hosted a cookie party for family and friends that had an impact in our lives over the course of that year. What started off with me baking 15 types of cookies and about 40 people, grew to my baking of 52 types of cookies and over 200 people! We weren’t able to host the party this last year due to an emergency with my parents health and this year, with the sudden addition of our 2 yr old god-daughter now living with us for the time being, it may be put on hold again. However, I’m still developing flavors and new cookies for when we start back up with this party!
The party has not only 52 types of cookies, but also 11 different types of desserts along with it. My MOST requested dessert by far is my Croissant Bread Pudding! I discovered using croissants in bread pudding while working as a catering manager for Cameron Mitchell Restaurants 30 years ago. My bread pudding recipe has the added brown Sugar Buttermilk Syrup is kicker that puts it over the top! I’ve been trying to make a cookie that represents the flavors of that dessert, and this one is the closest I’ve come.
